Raw Cole Slaw

It’s summertime, things are open and we’re looking for fresh new ideas to reconnect and enjoy each other’s company. Food is always a very bonding experience, especially when the food is fresh and delicious!

One of my favorite summer recipes is Raw Cole Slaw. I’m just gonna warn you right now you’re going to want to double batch it. If your lucky enough to have some leftovers, they are amazing!

This recipe is pretty quick and easy and sure to be a treat for any gathering.

  • 2 cups purple cabbage, shredded
  • 1 large one peeled cucumber, diced
  • 1 large shredded carrot
  • 1/4 cup shredded onion (I prefer red onion)
  • 1 1/2 tablespoons cumin seeds
  • 1 1/2 tablespoons ground cumin
  • 3 1/2 tablespoons fresh – squeezed lemon juice
  • 1/2 cup diced tomato
  • 3 tablespoons of organic tamari sauce or 1 teaspoon Celtic sea salt
  • 1/3 cup olive oil
  • 1 tablespoon minced garlic

Combine all the ingredients in a serving bowl, mix and serve.
